Description
An end-grain block, which means the knife edge parts the fibres instead of cutting across them and the board closes back over the mark. Squares of mesquite are stood on end, glued, flattened and sanded to a chessboard of dark and pale end faces that no two blocks repeat. It is 18 by 12 in., 1.5 in. thick and close to 9 lb., which is heavy enough that it does not move under a cleaver. Four recessed silicone feet lift it off the counter for airflow underneath. Scrape it down with a bench scraper, wash by hand, keep it off its side while drying, and oil it heavily the first month. Ships in 0–2 business days.
